Old Fashioned Soft Pumpkin Cookies with Icing

Ingredients

  • GLAZE:
  • 2 & 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 & 1/2 cups sugar
  • 1/2 cup butter ( 1 stick ) softened ( I used unsalted butter )
  • 1 cup pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 3 tablespoons milk ( I used almond milk )
  • 1 tablespoon melted butter ( I used unsalted butter )
  • 1 teaspoon vanilla
  • ( Mix all these ingredients together in a small bowl until smooth )

Preparation

Step 1

Pre heat oven to 350 grease baking sheets ( I used parchment paper with o additional grease )
Combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt in a medium bowl. Beat sugar and butter in a large mixer bowl until well blended. Beat in the pumpkin, egg and vanilla until smooth. Gradually beat in the flour mixture. Drop by rounded tablespoon onto prepared baking sheets.
Bake for 15 - 18 minutes until edges are firm. Cool on baking sheet 2 minutes, remove.
Drizzle glaze over cookies.
