Ingredients
- 1 Tbsp margarine
- 2 small carrots, peeled and finely chopped
- 1 medium onion, finely chopped
- 1/2 small green pepper, finely chopped
- 1/2 small red pepper, finely chopped
- 1 tsp dried sage
- 1 large egg white, lightly beaten
- 1 lb lean ground turkey
- 1 cup soft white bread crumbs (two slices)
- 1/3 cup ketchup
- 2 oz swiss cheese, cut into 1/4" cubes
- 1/2 tsp black pepper
Preparation
Step 1
Melt margarine in medium size saucepan over low heat. Add carrot, onion, peppers and sage. Cook, covered, stirring occasionally, until soft, 8-10 minutes.
Preheat oven to 375. In large bowl, combine egg whites, ground turkey, bread crumbs, ketchup, cheese, and pepper. Add cooked vegetables and mix well.
Bake in two loaf pans for about an hour, until loaves are lightly browned and firm to the touch.
