Ingredients
- 2 ears corn (about 2 cups)
- 1 cup non-fat Greek yogurt
- 3 ounces cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 chipotle peppers, finely chopped
- 2 green onions, chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
Preparation
Step 1
1 Grill ears of corn until slightly charred. Cut from the cob and cool.
2 In a medium bowl, combine remaining ingredients along with corn.
3 Serve with Ritz crackers.
