Ingredients
- 8 oz Cream Cheese
- 1 c pumpkin purée
- 1/2 c sugar
- 2 eggs + 1 egg for washing
- 1 tsp vanilla
- 1 tsp pumpkin pie spice
Preparation
Step 1
Preheat to 350
Grease & Flour muffin pan
Cut 12 24 inch rounds pie crust
Carefully press into muffin pan
Brush with egg wash
Beat sugar and cream cheese, until smooth. Add one egg at a time.
Add pumpkin and beat to combine. Stir in vanilla and pumpkin pie spice
Spoon in mixture almost to the top.
Bake 15 to 20 minutes
Cool in refrigerator
