Apricot Dream Bars

With delicious apricots and walnuts, these dream bars are perfect for any time of the year. They're even better with a scoop of vanilla ice cream.

Ingredients

  • CRUST:
  • 1 cup flour
  • 1/2 cup soft butter
  • 1/4 cup sugar
  • FILLING:
  • Apricot jam
  • 1/3 cup flour
  • 2/3 cup dried apricots
  • 1 cup packed brown sugar
  • 2 eggs
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • Salt to taste
  • Confectioners' sugar

Preparation

Step 1

Grease an 8x8-inch pan. Preheat oven to 350°F.

Cook apricots in a sauce pan covered in water. Drain and chop.

CRUST:
Combine flour, butter, and sugar. Cut together until crumbly and press evenly into pan with fork.

Cook for 25 minutes and cool.

FILLING:
Spread jam evenly over this crust.

In a bowl, combine 1/3 cup flour, apricots, brown sugar, eggs, walnuts, baking powder. Mix completely and spread over jam.

Put in oven and bake for 25 to 30 minutes.

Let cool. Powder with confectioner’s sugar and cut.
