Alternately you can make strawberry and carrot cake cookies. Use strawberry extract for the strawberry version.For carrot cake use 1/8 tsp of ground ginger and a tsp of vanilla extract

Ingredients

  • 1 Package (18.25oz) lemon cake mix
  • 2 eggs
  • 1/3 cup veg. oil
  • 1 Tbs lemon juice
  • 1/3 cup confectioner's sugar

Preparation

Step 1

Preheat oven to 375.
Pour cake mix into a large bowl.Stir in eggs,oil and lemon juice until well blended. Drop tsp of dough into a bowl of confec. sugar. Roll them around until they're lightly covered. Once sugared,put them on an ungreased cookie sheet.
Bake for 6-7 min in preheated oven .The bottoms will be light brown and the insides chewy.
