Tomato and Barley Soup

Ingredients

  • 2 tbsp (30 mL) olive oil
  • 2 large onions, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 4 cups (1 L) CAMPBELL’S® Ready to Use Chicken Broth
  • 2 cans diced tomatoes, including juices
  • 1/2 cup (125 mL) pearl barley
  • 2 tbsp (30 mL) fresh parsley, chopped

Preparation

Step 1

In large saucepan,heat oil over medium heat; sauté onions,garlic and celery for about 2 minutes or until slightly softened.

Stir in chicken broth,tomatoes with juices and barley; reduce heat to low. Cover and cook for about 15 minutes or until barley is tender; stir in parsley.
