Creamy Dijon-Dill Potato Salad

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 6 medium red potatoes, quartered
  • 1/2 medium red onion, chopped
  • 1/4 tsp black pepper
  • 3 tbsp dill, chopped
  • 1/4 tsp kosher salt
  • 1/2 c plain low fat yogurt

Preparation

Step 1

1. Add potatoes to a pot and cover with an inch of water. Salt the water and bring to a boil, cooking for 10-15 minutes or until you can pierce the potatoes with a fork. Drain, set aside.

2. In a large bowl, whisk yogurt, olive oil, garlic, dijon mustard and dill.

3. Combine cooked potatoes with onions and dressing. Season with salt and black pepper.

4. Serve immediately or refrigerate for an hour.
