Ingredients
- 2 Lbs potatoes
- 4 Tbsp EVOO
- 1/3 C chicken broth
- 1 Tsp oregano
- 1/2 Tsp salt
- Course sea salt
- Paprika
- 3 garlic cloves
- 2 lemons
- pepper
- parsley
Preparation
Step 1
Preheat oven to 400F.
Peel potatoes, make sure all potatoes end up similar in size, cutting the larger ones where necessary, give them a good wash.
Wash one of the lemons, and zest the lemon into a bowl, making sure you don't grate too far into the white pithy stuff. Add the juice of both lemons to the bowl. Add 4 Tbsp EVOO, good pinch of pepper,oregano, and chicken broth. Mix well.
Transfer potatoes to a baking dish, pour the dressing on top and coat the potatoes well with the dressing. Sprinkle salt and parsley over potatoes, add some paprika for color. Bake for 30 minutes, remove from oven, turn them over and return to oven for another 20 minutes. Check for readiness.
