Tomato, cucumber and avocado salad

Ingredients

  • 1 whole cucumber, peeled and diced
  • 1/2 cup onion, finely chopped
  • 1 avocado
  • 4 cups romaine lettuce
  • 2 cups celery, chopped
  • 1 Tbsp. parsley finely chopped
  • 2 Tbsps. extra virgin olive oil
  • Sea salt and black pepper to taste

Preparation

Step 1

Clean and cut all vegetables then place in a medium-sized bowl.
Sprinkle parsley, drizzle oil and add salt and pepper.
Let chill for 15-30 minutes.
