Instant Pot Beef Stroganoff

Ingredients

  • 2 Pounds stew meat
  • 1 T vegetable oil
  • 2 T tomato paste
  • Dry minced onion to taste
  • Garlic powder to taste
  • 1 1/2 cups beef broth
  • 1 12oz package white mushrooms quartered or sliced
  • 2 T Cornstarch
  • 3 T Water
  • 1/3 cup plain greek yogurt
  • Salt and Pepper
  • Egg Noodles

Preparation

Step 1

Put oil in the instant pot and select saute and high heat
Season beef with salt and pepper
Brown beef in batches and transfer to a plate
Put all beef back in pot and add tomato paste, dry onion, garlic powder and beef broth. Stir to deglaze.
Select manual and high pressure and adjust time to 18 minutes.
When beep sounds let instant pot release pressure naturally for about 10 min
and remove lid when pressure is released
Combine cornstarch and water and add to broth with mushrooms.
Select Saute and adjust temp to low and stir until sauce thickens
Select cancel on Instant pot
Add 1/3 cup gravy to greek yogurt and mix then add to pot and stir till blended
Serve over egg noodles
