Ingredients
- 2 cups uncooked converted long grain rice
- 2 cups chicken broth
- 1 1/2 lbs skinless turkey breasts, cut into bite sized chunks
- 1/4 cup Italian parsley, chopped
- 1/4 cup black olives, sliced
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tsp lemon zest, grated
- 1 tbs lemon juice
- 1 14 1/2 can stewed tomatoes, undrained
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
1. Combine all ingredients in slow cooker except for cheese. Mix thoroughly.
2. Cook on low 6-8 hrs or high for 3-4 hrs.
3. Sprinkle with Parmesan cheese before serving.
