Mediterranean Turkey and Rice Bake

Ingredients

  • 2 cups uncooked converted long grain rice
  • 2 cups chicken broth
  • 1 1/2 lbs skinless turkey breasts, cut into bite sized chunks
  • 1/4 cup Italian parsley, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 tsp lemon zest, grated
  • 1 tbs lemon juice
  • 1 14 1/2 can stewed tomatoes, undrained
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

1. Combine all ingredients in slow cooker except for cheese. Mix thoroughly.

2. Cook on low 6-8 hrs or high for 3-4 hrs.

3. Sprinkle with Parmesan cheese before serving.
