Potato Salad (Ruth's)

This is the BEST potato salad I have ever eaten. It is my mother-in-law's recipe and an all time favorite.

Ingredients

  • TO MAKE THE HUGE 32 CUP TUPPERWARE BOWL:
  • 13 # potatoes (peeled, boiled and cooled and diced)
  • 2 quarts miracle whip
  • 1/4 c. vinegar
  • 1/4 c. yellow mustard
  • 1/8 c. sugar
  • 1 1/2 c. celery (diced)
  • 3/4 c. onions (diced)
  • 1 1/2 dozen hard boiled eggs (diced) make a few extra to put on top of salad
  • TO MAKE A FAMILY SIZE BOWL:
  • 5 # potatoes (peeled, boiled and cooled and diced)
  • 3 c. miracle whip
  • 4 tsp. vinegar
  • 4 tsp mustard
  • 2 tsp. sugar
  • 1/2 c. celery (diced)
  • 1/4 c. onions (diced)
  • 6 hard boiled eggs (diced), make a few extra for garnish

Preparation

Step 1

Mix miracle whip, vinegar, mustard and sugar together and pour over potatoes, eggs, celery and onions. Slice extra eggs to arrange on top of salad.
