Spinach Lasagna

Ingredients

  • 9 lasagna noodles
  • 2 (12 ounce) bags fresh spinach
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 16 ounces chopped mushrooms
  • 2 jars spicy red pepper pasta sauce
  • 16 ounces shredded FF mozzarella cheese
  • 16 ounces cream cheese
  • Italian spice
  • Italian herbs
  • Salt and black pepper, to taste
  • Parmigiano-Reggiano

Preparation

Step 1

Sauté onion, green pepper, mushrooms and garlic in olive oil until tender.

Layer 3 lasagna noodles in the bottom of a 9 x 13 inch baking pan. Layer ingredients in the following order: 1/3 jar of spaghetti sauce, half of the cooked spinach, half of the sautéed vegetables, half of the cheeses, and a sprinkle of spices and herbs. Repeat, starting with the noodles.

Top with the final 3 noodles and spaghetti sauce. Sprinkle with Parmigiano-Reggiano. Bake in 350º oven for 1 hour, or until bubbly.
