Libby's Famous Pumpkin Pie

Ingredients

  • Pie crust (purchased or make your own)for one-crust pie using a 9-inch pie pan.
  • 2 eggs, lightly beaten
  • 3/4 cup sugar
  • 1 can (16 ounces) solid pack pumpkin
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1 can evaporated milk

Preparation

Step 1

Mix filling ingredients in order. Pour into crust. Bake in preheated 425 oven for 15 minutes. Reduce heat to 350. Bake additional 40-50 minutes or until knife inserted near center comes out clean.

If necessary, cover the edge of the crust with aluminum foil to prevent excessive browning.
