ITALIAN ROAST POTATOES

Ingredients

  • 2 1/2 lb waxy potatoes (red bliss, 6 medium), unpeeled, cut into 1" cubes
  • 12 cloves garlic, peeled
  • 2 tsp dried oregano
  • 1/2 cup olive oil
  • salt

Preparation

Step 1

1. Oven 425 degrees. In large roasting pan, combine potatoes, garlic, oregano and oil. Stir until potatoes are well-coated, and spread them evenly in pan.
2. Place pan in oven and roast until golden brown and crispy, 40" to an hour. If potatoes are crowded in pan they will take longer to crisp.
3. Remove potatoes and garlic from oven, transfer to serving dish. Sprinkle with S&P to taste, serve immediately
