Carrot Bread

Ingredients

  • 1 cup cold water
  • 2/3 cup raisins
  • 3/4 cup sugar
  • 1 cup grated carrots
  • 1/4 cup oil
  • 1/2 tsp. salt
  • 2 cups flour
  • 1 1/2 tsp. baking powder (level)
  • 1 1/2 tsp. baking soda (level)
  • 1/4 tsp. cinnamon

Preparation

Step 1

Boil water, raisins, sugar, carrots, margarine and salt for 5 minutes. Cool.

Stir in dry ingredients until well mixed.

Bake in a loaf pan for 40-45 minutes at 350 deg.

Bake 2 small loaves for 35-40 minutes at 375 deg.

Do not overbake.
