Catfish Jambalaya

Ingredients

  • 2 cups chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 garlic cloves
  • 1/4 cup butter
  • 1 can Rotel
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon salt
  • 1 lb catfish fillets, cubed
  • Hot cooked rice
  • Sliced green onions

Preparation

Step 1

In saucepan over medium heat, saute vegetables and garlic, cooking till tender, about 10 minutes. Add rotel, mushrooms and seasonings. Add fish.
Reduce heat; cover and simmer until fish is flakes easy. Serve over rice and top with green onions.
