Roasted Pork Loin with Mushroom Gravy

Ingredients

  • 1 (2-pk) pork tenderloins
  • Salt & pepper, to taste
  • 2 TB canola oil
  • 1 large onion, halved & thinly sliced
  • 8 oz. baby bella mushrooms
  • 1 package brown gravy mix

Preparation

Step 1

Preheat oven to 400. Line a rimmed baking sheet with foil. Season tenderloins with salt & pepper. In a large nonstick pan, heat 1 TB oil over medium-high heat. Add tenderloins & brown on all sides. Place on baking sheet & bake for 10-30 minutes, or until desired doneness. While tenderloins bake, add the remaining 1 TB oil to the pan & heat over medium-high heat. Add the onions & mushrooms, cooking until tender, about 5 minutes. In a small bowl, whisk together the gravy mix & 1½ cups water. Add to the pan & cook until the gravy is thickened. Slice the tenderloins & serve with the gravy.
