Ingredients
- 1 lb mushrooms
- 1 T olive oil
- 4 green onions, chopped
- 3 T parsley
- 1/2 tsp minced garlic
- 1/2 tsp salt
- 1/3 tsp pepper
- 1 T lemon juice
- 1/2 cup ricotta cheese
- 1/4 c bread crumbs
Preparation
Step 1
Preheat oven to 400 degrees. Wash mushrooms quickly under cold water and dry. Remove stems and chop. Set cups aside.
In medium saucepan heat oil. Add onions, stems and garlic. Saute 2 minutes. Add parsley, salt, pepper, lemon juice and cheese. Blend until smooth.
Stuff mushroom cups with mixture and place on baking sheet. Dust top with bread crumbs.
Bake for 7 minutes.
