Couscous Confetti Salad

Ingredients

  • 1 1/2 c dry whole-wheat couscous
  • 2 c boiling water
  • 3-4 green onions
  • 1 red bell pepper
  • 1/2 c parsley
  • raw veggies of choice
  • 1/2 dried appricots
  • 1 lemon
  • 1/4 c season rice vinegar
  • 1 T olive oil
  • 1 tsp curry powder
  • 1 1/2 salt

Preparation

Step 1

1. In large bowl, combine couscous and bowling water. Stir to mix, then over and let stand until all water has been adsorbed, 5 to 10 minutes. Fluff with a fork.

2. Add green onions, bell pepper, parsley, apricots and veggies

3. In small bowl mix lemon juice, vinegar, oil, curry powder and salt. Add to salad and toss to mix. Serve at room temperature or chilled.
