Potato Salad

Ingredients

  • 1 head cauliflower
  • salt and pepper to taste
  • 2 tbsp olive oil
  • DRESSING
  • 1/2 cup greek yogurt
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 2 tbsp dill, chopped
  • 1 tbsp olive oil
  • 1 garlic clove, chopped
  • juice of 1/2 lemon
  • 1/2 red onion, diced
  • 3 stalks celery, diced
  • 3 hard boiled eggs, chopped

Preparation

Step 1

Preheat oven to 400 degrees.

Slice cauliflower into small florets.

Place cauliflower onto baking sheet for 25 minutes or until lightly browned and a bit crispy.

In a large bowl, combine all dressing ingredients. Set aside.

Once cauliflower is cooled, set aside and let cool slightly before adding to the yogurt dressing.

Garnish with more freshly chopped dill before serving.
