Cucumbers with Wasabi and Rice Vinegar

I love pickles of all sorts. These as awesome as they are quick.

Ingredients
- 1 lb Japanese or Kirby cucumbers
- 1/2 tsp wasabi powder
- 1/2 tsp water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/4 tsp soy sauce
Preparation
Step 1
Very thinly slice the cucumbers and toss with 1 tsp salt in a colander. Let them drain for 15 min. Rince the cucumbers under cold water, then squeeze handfuls to remove the excess water. Pat the cucumbers dry.
Stir together the wasabi powder and water in a bowl and let stand for 5 minutes. Add the vinegar, sugar, and soy sauce, whisking until the sugar is dissolved. Add the cucumbers and toss well.
You can make these a day ahead and chill them covered.
