Tomatoes Caprese

Ingredients

  • 1 (12-oz) bottle balsamic vinegar
  • 1 red tomato, cut into 1/4-inch-thick slices
  • 1 yellow tomato, cut into 1/4-inch-thick slices
  • 1 orange tomato, cut into 1/4-inch-thick slices
  • 1 green tomato, cut into 1/4-inch-thick slices
  • 1 (8-oz) pack whole milk mozzarella, cut into 1/4-inch-thick slices
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3/4 cup thinly sliced fresh basil

Preparation

Step 1

In a medium saucepan, cook balsamic vinegar over medium heat, swirling pan occasionally, until vinegar is reduced to 1/2 cup, about 10 minutes. Remove from heat, and let cool.
Arrange tomatoes and mozzarella on a serving platter. Drizzle with vinegar. Sprinkle evenly with salt and pepper. Top with basil just before serving.
