Ingredients
- 1 tablespoon oil
- 1 1/4 lb pork tenderloin
- salt and pepper
- 2 tablespoons butter
- 1 medium shallot, finely chopped (2 tablespoons)
- 1 tsp. grated ginger
- 3/4 c. orange juice
- 1/2 tsp. dried thyme
Preparation
Step 1
Warm oil in a large skillet. Sprinkle pork with salt and pepper, add to skillet and brown on all sides. Leave drippings in skillet. Place meat on baking sheet, roast at 400 degrees until a meat thermometer reads 145 degrees, about 15-18 minutes. Let meat rest for about 10 minutes.
Warm 1 tablespoon butter in the same skillet. Add shallot and ginger, saute until softened. Add orange juice, bring to a simmer. Stir in thyme. Simmer until sauce has thickened and is syrupy. Remove from heat, swirl in remaining 1 tablespoon of butter. Season with salt and butter.
Slice pork and serve with pan sauce.
