Potato Chip Crusted Cod

Ingredients

  • 4 (6-8 oz) cod fillets
  • Salt
  • 2 tablespoons mayonnaise
  • 2 cups crushed Kettle potato chips

Directions

1. Preheat oven to 375 degrees F. Line a baking sheet with foil and grease with nonstick spray

2. Place cod fillets on baking sheet and sprinkle a pinch of salt on top of each fillet. Spread the mayonnaise equally over the four fillets

3. Sprinkle equal amounts of potato chips on top of each fillet an then bake for 12 to 14 minutes until the fish is cooked through, flesh is opaque and flakes easily
