Ingredients
- 2 1/2 lbs ripe tomatoes
- 3 tbs chopped parsley
- 2 tbs chopped garlic
- Salt/Pepper
- 1/4 cup extra-virgin olive oil
Preparation
Step 1
Preheat oven to 400. Halve tomatoes crosswise and arrange them cut side up in glass or ceramic baking dish in which they fit snugly. Sprinkle w/parsley and garlic; season w/salt and pepper. Drizzle olive oil all over tomatoes and bake them for 1 hr 15 min.
