Cornflake Almond Chews

It's recommended to double the almond and coconut amounts, and these will go fast so you might as well go ahead and double the recipe while you're at it!

Ingredients

  • 1/4 c butter
  • 1/4 c corn syrup
  • pinch of salt
  • 1/2 c packed brown sugar
  • 3 tbsp cream
  • 2 c corn flakes (slightly crushed)
  • 1/2 c shredded coconut
  • 1/4 c sliced almonds

Preparation

Step 1

Melt first 5 ingredients together on medium heat and bring to a boil. Boil for 2 minutes. Remove from heat. Pour over remaining ingredients and mix well.

Press into a buttered 8x8 pan and refrigerate until firm. Cut into squares.

After mixing, if the bottom is still syrupy, add more cornflakes a little at a time until all the liquid is used.
