Ingredients
- 1 can(approx. 2cups) cooked green lentils.
- 2 carrots diced
- 1 red pepper diced
- 1/2 red onion diced
Preparation
Step 1
Combined the above in a bowl
Then combine and shake:
1/2 cup olive oil
Juice of 1 fresh lemon or 2 tbsp. lemon juice
2 tbsp. Dijon mustard
Pour dressing over ingredients in a bowl and mix.
Add crumbled Feta cheese. Top with parsley.
