Ingredients
- 1 cup chopped sun-dried tomatoes (packed in oil)
- 1 small jar capers, rinsed and drained
- 1 tbs minced garlic
- 1 cup extra virgin olive oil
- 1 loaf crusty french bread, cut in 2 inch pieces
- 1 tbs chopped fresh basil or 1 tsp dried
- 1 tbs chopped fresh oregano or 1 tsp dried
- 1 cup Asiago or Feta Cheese
Preparation
Step 1
In mixing bowl, combine tomatoes, garlic, olive oil, basil and oregano. Add capers. Spread bread slices out. Drizzle 1 tsp of mixture over each slice. Using back of spoon, lightly press mixture into surface of each slice and let soak in. Sprinkle cheese over top of each slice. Bake at 400 approx 15 minutes or until top browns.
