Step 1
Oil one ear of corn and sprinkle with chili powder, ground coriander and kosher salt. Then broil the corn, 2 plum tomatoes and 1 bunch scallions, 5-7 minutes. Chop the scallions and tomatoes, mash with 3 diced avocados, 2 minced jalapenos, 1/4 c chopped cilantro, and the juice of one lime. Add the corn kernels and season with more chili powder, coriander and salt. I TRIED THIS 5/2010 AND IT WAS REALLY GOOD. MAYBE DO TWO EARS OF CORN AND THE SCALLIONS GOT MUSHY SO TRY NOT TO COOK THEM AS LONG. I MADE THIS FOR BRADYS BIRTHDAY PARTY ON 9/18/11 AND MANY POSITIVE COMMENTS, I USED THREE EARS OF CORN AND ONE TOO MANY. IT WAS SO GOOD THOUGH SARAH WANTED TO RECEIPE, WHICH I GAVE HER.
