Creole shrimp and rice

  • 3 tablespoons vegetable oil
  • 3/4 pound large shrimp
  • 3 teaspoons Creole seasoning
  • to a large green peppers diced
  • one half large onion diced
  • three ribs celery thinly sliced
  • two cloves garlic minced
  • 1 CAN 14 1/2 ounces stewed tomatoes
  • 4 1/2 cups cooked rice and

Preparation

Step 1

Heat 2 tablespoons oil in a large nonstick skillet over medium high heat and shrimp and season with 1 teaspoon Creole seasoning sauté for two minutes per side remove to a plate and remaining tablespoon oil PEPPERS ONIONS celery and garlic cook for five minutes stirring occasionally scrape up any browned bits in the bottom of skillet add tomatoes and remaining 2 teaspoons Creole seasoning break up tomatoes with back of wooden spoon simmer covered for five minutes stir in shrimp and heat through
