Potato Skin Poppers

Ingredients

  • 3 c. frozen diced potatoes (or hash browns)
  • 2 c. shredded cheddar cheese
  • 1 16 oz sour cream
  • 3/4 c. cooked bacon pieces
  • 1/3 c. chopped green onions
  • 14 flour tortillas
  • 2 tbsp melted butter
  • salt/pepper

Preparation

Step 1

Cook potatoes according to directions on package. Stir together cooked potatoes with cheese, 1 c. sour cream, bacon, onion, salt and pepper. Warm tortillas and spoon mixture into center of each. Roll burrito style. Brush w/butter and place seam side down on baking pan. Bake 12-15 minutes at 350 degrees. Cool 5 minutes, cut separately into halves and serve w/sour cream. Refrigerate leftovers.
