Cajun Salmon Sandwich

Ingredients

  • 16 oz salmon
  • 2 tbls cajun seasoning
  • 1 tbls butter
  • ciabatta rolls
  • 3 oz goat cheese
  • 4 oz mayonnaise
  • 1 1/2 tbls lemon juice
  • thinly sliced red onion

Preparation

Step 1

Season salmon with cajun seasoning. In pan, saute salmon in butter, fat side down, until golden brown. Turn over and cook until other side is golden brown. Transfer salmon onto sheet tray and place in oven for 4-6 minutes. Remove from oven and let rest.

Slice ciabatta rolls and spread with goat cheese, mayo and lemon mixture.
