Apples on Horseback

Ingredients

  • 16 thin slices of pancetta
  • 1 Pink Lady apple, peeled & cut into 16 wedges
  • 3 oz Manchebo cheese, sliced 1/4" thick & cut into 2 x 1/2" sticks
  • 16 rosemary sprigs or toothpicks as skewers

Preparation

Step 1

Preheat grill pan. Arrange pancetta slices on work surface & place an apple wedge & cheese stick in center. Wrap pancetta around filling & secure with rosemary sprig or toothpick

Grill skewers until pancetta is golden & crispy & cheese is melted, @ 5-6 min. Serve hot.
