Ingredients
- 5 pounds chicken pieces
- 1/3 cup flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon thyme leaves
- 1/2 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon chervil
- 2 teaspoons salt
- 2 teaspoons chili powder
- 1/4 cup vegetable oil
- 2 teaspoons green peppercorns
- 2 teaspoons pink peppercorns
- 1 teaspoon black peppercorns
- 2 cups demi glace
- 1/3 cup whipping cream
- 1/4 cup marsala wine
- 1 tablespoon butter
Preparation
Step 1
Wash and pat dry chicken.
Combine flour with seasonings. Dust chicken with the flour.
Heat oil in large skillet. Fry chicken until golden brown. Add peppercorns and demi-glace. Reduce heat; cover and simmer for 1 hour. Transfer chicken to serving platter.
Increase the heat and reduce sauce by half. Stir in the cream and wine. Whisk in the butter, pour over chicken and serve.
