Ingredients
- 4 tablespoons olive oil
- 4 skinless boneless chicken breast halves
- 1/2 cup coarsely chopped drained oil packed sun-dried tomatoes
- 2 large shallots, thinly sliced
- 4 cloves garlic, minced
- 1 cup whipping cream
Preparation
Step 1
Heat oil in heavy skillet over medium-high heat. Add chicken; saute until cooked through. Transfer to plate. Tent.
Add remaining oil to pan. Add tomatoes, shallots and garlic. Reduce heat to medium and saute until tender, about 5 minutes. Add whipping cream and bring to boil. Mix in any chicken juice. Simmer until slightly thickened. Season with salt and pepper. Pour over chicken.
