Ingredients
- 2 lbs. sweet potatoes (peeled and cubed)
- 4 T butter
- 3 T packed brown sugar
- 1/2 c pecan pieces
- 1/2 c skim milk heated 30 seconds in microwave
- 3/4 tsp pumpkin pie spice
- 1/2 tsp. salt
Preparation
Step 1
In large pot cook potatoes in boiling water. Meanwhile in medium pot, cook 1 T butter and 1 T brown sugar until melted. Add pecans, cook and then spread on to parchment paper to cool.
Drain potatoes and mash adding remaining butter, 2 T brown sugar, warm milk, pumpkin pie spice and salt. Mash until smooth.
Top with caramelized pecan and serve.
