Mashed Sweet Potatoes w. Carmelized Pecans

Ingredients

  • 2 lbs. sweet potatoes (peeled and cubed)
  • 4 T butter
  • 3 T packed brown sugar
  • 1/2 c pecan pieces
  • 1/2 c skim milk heated 30 seconds in microwave
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp. salt

Preparation

Step 1

In large pot cook potatoes in boiling water. Meanwhile in medium pot, cook 1 T butter and 1 T brown sugar until melted. Add pecans, cook and then spread on to parchment paper to cool.

Drain potatoes and mash adding remaining butter, 2 T brown sugar, warm milk, pumpkin pie spice and salt. Mash until smooth.

Top with caramelized pecan and serve.
