Ingredients
- 2 c bowtie pasta
- 1 1/2 lbs. tomatoes (fresh variety)
- 2 T olive oil
- 1 T balsamic vinegar
- 1 T basil
- 1 T parsley
- 1 tsp. salt
- 1/2 tsp pepper
- 2-3 T Asiago cheese (optional)
Preparation
Step 1
Cook pasta and drain Meanwhile, slice tomatoes. In small bowl, whisk together oil, vinegar, salt, pepper, basil and parsley. Toss tomatoes and vinaigrette into hot cooked pasta. Serve immediately. Top with cheese.
If serving cold cover and store overnight in refrigerator, but omit cheese.
