BACON AND POTATO CHOWDER

Ingredients

  • 6 to 8 slices bacon
  • 1 cup chopped onion
  • 3 cups raw diced potatoes
  • 3 cups water
  • 3 chicken bullion cubes
  • 3 tbsp. Flour
  • 1 large can carnation evaporated milk

Preparation

Step 1

Fry bacon in a large pot until crisp. Drain well.Set aside. Reserve 2 tbsp. Bacon drippings. Sauté onions in drippings for 5 minutes. Add potatoes, water and bouillon cubes. Heat to boiling. Cover and simmer for 15 minutes or until potatoes are tender. Mix flour with small amount of carnation evaporated milk to make a paste. Add to potatoes mixture and then add bacon. Cook over medium heat, stirring constantly until mixture comes to a boil and thickens.
