FRENCH ONION SOUP

Ingredients

  • 6 cups beef broth
  • 4 large onions
  • 6 tbsp. Butter
  • 1/4 cup of sherry
  • 1/2 cup grated Swiss cheese
  • 6 pieces toasted French bread
  • Grated Parmesan cheese
  • Salt and pepper to taste

Preparation

Step 1

Peel the onions and cut into thin slices.
Heat the butter and sauté the onions slices until they are soft and brown. Bring the broth to a boil and add it to the onions. Add the sherry, taste for seasoning and add salt and pepper as desired. Add grated cheese and pour into a large casserole or into individual French onion bowls and bake in 350 oven for 15 minutes. Top with toasted bread slices, sprinkle with Parmesan cheese and serve.
