Ingredients
- 1 lb ziti, fusilli, rotelle or another short pasta
- 1/4 cup olive oil, or more to taste
- 1/2 cup olives (pitted, if serving small children)
- two 6 oz jars artichoke hearts, drained
- 2 cups coarsely chopped or roughly shredded cooked chicken
- 1/4 cup grated parm cheese or to taste
- freshly ground black pepper
Preparation
Step 1
cook the pasta according to package directions and drain thoroughly. wipe the pasta pot dry then add the 1/4 cup olive oil. add warm, drained pasta to oil and toss to coat. add olives, artichoke hearts and chicken and toss very gently. add additional olive oil if desired. serve immediately with cheese and pepper to taste.
