Lemon Raspberry/Blueberry Muffins

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup half-and-half cream
  • 1/2 cup vegetable oil
  • 1 tsp lemon extract
  • 1 cup fresh or frozen unsweetened raspberries or blueberries

Preparation

Step 1

In a large bowl combine flour, sugar, baking powder and salt.
In another bowl combine eggs, cream, oil and extract. Stir into dry ingredients just until moistened.
Fold in berries.
Fill greased JUMBO muffin tin 2/3 full. Bake at 400 degrees 22-25 minutes or until a toothpick comes out clean.

If frozen berries are used do not thaw before adding to batter.
