Lemon squares

Ingredients

  • 2 1/4 c flour
  • 1/2 c confectioner's sugar
  • 1 c reduced calorie, unsalted tub margarine
  • 4 eggs
  • 1/2 tsp baking powder
  • 1/2 c granulated sugar
  • 1/2 c frozen oj concentrate, thawed
  • 1/4 c fresh lemon juice
  • 1 t plus 1 tsp grated lemon zest
  • 1/2 tsp vanilla extract

Preparation

Step 1

1) preheat oven to 350

2) in md. bowl stir together 2c flour and 1/4c plus 2t confectioner's sugar. cut the margarine into the mixture til it is crumbly.

3) pat dough in a 15x10 nonstick baking pan. bake 10-15 minutes til crust is set.

4) in md. bowl, beat eggs with remaining 1/4 c flour, baking powder, granulated sugar, oj concentrate, lemon juice, lemon zest and vanilla. pour egg mixture over hot crust and bake 12-15 minutes til top is set.

5) cool, sprinkle with remaining 2t of confectioner's sugar. cut into 24 squares
