warm white bean and kale salad

Ingredients

  • 1 About 1 Cup Chopped Kale or more!
  • 1/4 cup water
  • 1/8 cup Dried Cranberries
  • 1 15oz Can of Northern Beans drained and rinsed
  • 2 tsp Balsamic Vinegar
  • 1/2 oz Cashews chopped

Preparation

Step 1

Heat a non-stick skillet over medium-high heat. Add the kale and a 1/4 cup of water.Toss and cook for a minute or two until most of the water evaporates.

Add the beans.

Toss, add the vinegar and cook for 1-2 minutes allowing all the flavors to mix.

Add the cashews and cook for one more minute.
