Coconut Almond Carrot Ring

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 t baking powder
  • 1 t salt
  • 1 t cinnamon
  • 1 cup sugar
  • 1 cup oil
  • 2 eggs
  • 1 cup grated carrots
  • 1/2 cup chopped almonds
  • 1/2 cup raisins
  • 2 2/3 cup coconut
  • Cream cheese frosting (if desired)

Preparation

Step 1

Mix flour, baking powder, salt and cinnamon. Beat sugar and oil at medium speed. Stir in flour mixture. Add eggs one at a time. Stir in carrots, nuts, raisins and 2/3 cup coconut. Pour into greased and floured 9 inch bundt pan. Bake at 350 for 35 minutes or until done. Cool in pan 15 minutes. Remove from pan and finish cooling on rack. If desired frost with cream cheese frosting and cover with remaining coconut.
