Black Bean Chili

A "whip-it-together-in-no-time" dish from the fabulous Merrily Neill.

Ingredients

  • 1 onion, chopped
  • 2 cans black beans, drained and rinsed
  • 1 cup salsa
  • 1 can corn, drained and rinsed
  • 1 cup mild, low-fat cheddar cheese

Preparation

Step 1

In a dutch oven or large saucepan, brown the chopped onion in 1 tbsp of olive oil or vegetable oil.

When the onion is brown, add the remaining ingredients. Cook 10 minutes until the mixture is hot and bubbly.

Serving suggestions: ladle into bowls and sprinkle grated cheddar cheese on top, or ladle over cooked rice and sprinkle with cheese. Serve with a dollop of sour cream.

Everybody loves it and it serves 4 with a side dish and 3 without.
