Twice-Baked Grizzly Potato

Ingredients

  • 4 big ass Potatoes
  • 1/2 pound of your favorite Pulled Pork
  • 1/4 pound Shredded Cheese
  • 1 cup Bacon Pieces (or more. Much more is OK too)
  • 1 cup sliced Green Onions
  • Sour Cream (however much pleases you)
  • Salt & Pepper to taste
  • Favorite BBQ Sauce
  • 1 stick Butter

Preparation

Step 1

Preheat oven to 425 degrees F.
Bake Potatoes for 45 minutes.
Once done, halve each potato and scoop the potato innards into a large mixing bowl. Leave the halved skins intact on the side.
Mix potato innards, sour cream, green onion, butter, salt, and pepper to desired mashed potato consistency.
Scoop a generous layer of the mixed potatoes to each potato skin, but leave a nice pocket to fill with pulled pork.
Insert a plentiful ball of pulled pork in middle of each potato half.
Layer in more mashed potatoes, leaving the summit of Mt. BBQ popping out of each.
Top with shredded cheese, green onions and bacon bits.
OPTIONAL: Briefly broil to melt the cheese to your visual pleasure.
Pour warm BBQ sauce over the top, letting the sauce gently cascade down the side creating an alluring pool of BBQ sauce around the footing of your potato creation. Now have at it Boss.
