Orange Chicken or Beef

Ingredients

  • 8 oz large dice dark meat chicken, or beef
  • 1 egg
  • 1 tbsp white wine
  • cornstarch until dry
  • 4 dry chili pepper
  • 1/2 oz chili oil
  • 2-3 oz sugar
  • 1 c Chinese brown sauce
  • 1 orange rind julienned
  • juice from 1 orange
  • 2 oz vinegar
  • 1/2 oz sesame oil
  • 1/2 tsp dark mushroom soy
  • 1 oz ginger, minced
  • 1 oz garlic, minced
  • 2 oz scallions, chopped
  • cornstarch slurry until thicken
  • salt and pepper tt

Preparation

Step 1

Marinate meat with egg, wine, and salt and pepper, and cornstarch until dry. Fry until golden brown and set aside. In a hot wok with 1oz oil stir fry the ginger, garlic, orange rind and chilis to brown off. Add vinegar, orange juice, sugar, and brown sauce. Bring to a boil and thicken with cornstarch slurry. Finish with dark mushroom soy, and sesame oil, and fold in chicken. Garnish with scallions.
