Ingredients
- 8 oz large dice dark meat chicken, or beef
- 1 egg
- 1 tbsp white wine
- cornstarch until dry
- 4 dry chili pepper
- 1/2 oz chili oil
- 2-3 oz sugar
- 1 c Chinese brown sauce
- 1 orange rind julienned
- juice from 1 orange
- 2 oz vinegar
- 1/2 oz sesame oil
- 1/2 tsp dark mushroom soy
- 1 oz ginger, minced
- 1 oz garlic, minced
- 2 oz scallions, chopped
- cornstarch slurry until thicken
- salt and pepper tt
Preparation
Step 1
Marinate meat with egg, wine, and salt and pepper, and cornstarch until dry. Fry until golden brown and set aside. In a hot wok with 1oz oil stir fry the ginger, garlic, orange rind and chilis to brown off. Add vinegar, orange juice, sugar, and brown sauce. Bring to a boil and thicken with cornstarch slurry. Finish with dark mushroom soy, and sesame oil, and fold in chicken. Garnish with scallions.
