Lemon Herb Rice Pilaf

Ingredients

  • 1 tablespoon vegetable oil or butter
  • 1 onion, chopped
  • 1/4 teaspoon salt
  • pinch pepper
  • 2 cloves garlic, pressed
  • 1/2 teaspoon mint
  • 1/2 teaspoon grated lemon rind
  • 1 cup long-grain rice
  • 2 cups chicken stock, or vegetable stock
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 green onion, sliced

Preparation

Step 1

In saucepan, heat oil over medium heat; add onion; and garlic. Stir in salt, pepper,mint and lemon rind; cook stirring often, for 5 minutes or until onion is softened.

Add rice, stirring to coat. Pour in stock and lemon juice; bring to boil. Reduce heat, cover and simmer for 20 minutes.

Add parsley and green onion. Cover and cook for 5 to 7 minutes or until rice is tender.
